I need recipe ideas...PLEASE! I don't mind eating healthy at all. But I'm just sick of the same way I make it. So if you all have Breakfast, Lunch, and Dinner recipes to share, PLEASE DO! Cause sharing IS caring =)
Hope everyone is doing well. And starting 2009 great!::

Mo's Chicken Stir Fry

Mona Liza Reyes's picture

Hey Ro,
One of my quick and favorite chicken recipes is the following:
Chicken breast, cut into 1" cubes
Diced onions
Minced garlic (I used the pre-cut ones in the jar)
Red Bell Pepper
Asparagus
Salt and Ground Pepper
2 tblspns of Mr. Yoshida's "sweet & savory" sauce
Sautee the onions first, then add chicken (sprinkle light salt/pepper to taste)
Once chicken is fully cooked, add chopped red bell peppers, asparagus and cover for 4 minutes. I like my asparagus semi-crunchy and semi-soft :) Finally add the Mr. Yoshida's sauce.. and let it simmer. You don't want to DROWN the stir-fry in it.. just to add a little sweetness to it. Top it over a cup of brown rice and you're GOOD to GO!

I hope this helps for now.
For Salmon Fliets, I season with LITE salt, garlic power and ground pepper. I use the same sauce and dice some fresh ginger in it. Baked covered with foil at 450 degrees for 30 mins, then uncover and decresed heat to 350 for another 15 mins. Add a little more sauce if you like :)
Keep me posted when you get a chance to try it.. Good luck Ro! Happy Friday

Be Blessed & Bless Others,
Mona Liza "MO" Reyes
